Gingerbread Cookies
You can make lovely seasonal shapes with this recipe.

Ingredients

1 ½ cups pitted dates

1 ½ cups gluten free oats

1 tsp cinnamon

2 tsp fresh ginger, peeled and grated

1 tsp stem ginger, chopped.

1/2 Orange, zest only
Directions

Place the pitted dates in a bowl and cover with boiling water. Allow to soak for 20 minutes

While the dates are soaking, put all the remaining ingredients in the bowl of a food processor.

Add in the drained, cooled, dates and blitz for a few minutes until all the ingredients are thoroughly blended and you have a smooth dough

Roll the dough into balls or flatten out on board and use a cookie cutter to cut into seasonal shapes.
