Gingerbread Cookies

Method

  • Place the pitted dates in a bowl and cover with boiling water. Allow to soak for 20mins. While the dates are soaking, put all the remaining ingredients in the bowl of a food processor.Add in the drained, cooled, dates and blitz for a few minutes until all the ingredients are thoroughly blended and you have a smooth dough. Roll the dough into balls or flatten out on board and use a cookie cutter to cut into seasonal shapes.
