You can make lovely seasonal shapes with this recipe.

Gingerbread Cookies

  • 1 ½ cups pitted dates

  • 1 ½ cups gluten free oats

  • 1 tsp cinnamon

  • 2 tsp fresh ginger, peeled and grated

  • 1 tsp stem ginger, chopped.

  • 1/2 Orange, zest only


  1. Place the pitted dates in a bowl and cover with boiling water. Allow to soak for 20 minutes

  2. While the dates are soaking, put all the remaining ingredients in the bowl of a food processor.

  3. Add in the drained, cooled, dates and blitz for a few minutes until all the ingredients are thoroughly blended and you have a smooth dough

  4. Roll the dough into balls or flatten out on board and use a cookie cutter to cut into seasonal shapes.
