Mammy's Traditional Christmas Pudding
For those of you that love Christmas Pudding this is a traditional recipe passed on to us by our mother. We helped her make them every year. We have fond memories of the smells and the joys of making them with her. She made several puddings every year to share with her siblings. They all loved them. I hope you enjoy our mammy's recipe.

Ingredients

200gm Sultanas
-
200gm Raisins
-
200gm Currants
-
100gm Cherries
-
125gm Self-raising flour
-
225gm Breadcrumbs

250gm Butter
-
200gm Dark brown sugar
-
25gm Ground almonds
-
Half teaspoon ground cinnamon

Half teaspoon mixed spice
-
Half teaspoon ground nutmeg

One medium carrot finely grated
-
One large cooking apple grated
-
Zest and juice of one lemon
-
4 large eggs
-
Splash of Brandy

Enough Guinness to to wet

Butter or margarine to grease pudding bowl
Directions

Sieve the flour, spices, and salt together in your mixing bowl

Combine all the other ingredients and mix well with a wooden spoon. Use enough liquid so that the mixture drops from the spoon.

Grease your pudding bowl. I used a 2 litre bowl.

Leave about 2cm from the top to allow the pudding to rise.

Cover with greaseproof paper then tinfoil and secure with string. For an easier option you can use a 2 litre plastic pudding bowl with a lid.

Place the pudding in a large saucepan and fill halfway with boiling water and steam for 8 hours. Keep an eye and top up as needed.

Let the pudding cool. Once cooled pop out of the bowl and wrap with greaseproof paper and store in a cool place until ready to eat. Enjoy
