Vegan & Gluten Free Christmas Pudding
A tried and tested vegan and gluten free recipe for a delicious Christmas pudding that will go down a treat.

Ingredients

250 g mixed fruit such as Sultanas, Currants, and Raisins

Zest & juice of 1 large orange

1 apple grated

1 tsp ground ginger
-
½ tsp ground cinnamon

1 tsp mixed spice

Generous amount of brandy

60 g coconut oil (¼ cup)

4 tbsp agave syrup
-
120 ml of unsweetened almond milk

2 tbsp lemon juice
-
1 tsp vanilla extract
-
150 g ground almonds
-
150 g gluten-free flour
-
2 tsp heaped tsp gluten free baking powder

¾ tsp gluten free baking soda
Directions

Place the mixed fruit, orange zest, grated apple, ginger, cinnamon and mixed spice, agave syrup in a bowl and add generous amount of brandy, until everything is roughly covered.

Keep covered in the fridge for around 24 hrs.

Place the coconut oil in a large bowl and melt over a saucepan of boiling water or in the microwave.

Once melted, add milk to the same bowl along with the lemon & orange juice, vanilla, and ground almonds.

Sift in the flour, baking powder and baking soda.

Add the dried fruit mix, adding a tiny splash of more milk if it seems too dry.

Grease a medium sized pudding bowl and transfer your mix.

Cover this with a circle of baking paper then tinfoil and tie with string to secure.

Place bowl in a pan and fill up with cold water to halfway up the bowl.

Place a lid on the pan and bring to the boil.
