Homemade Crunchy Goji Granola

Method

  • Preheat the oven to 140 degrees gas mark 1
  • Combine all the ingredients except for the goji berries in a large bowl and make sure that everything is mixed well
  • Transfer to a large rimmed baking tray. Spread the mix out evenly flattening the mixture with a wooden spoon.
  • Bake in the oven for 40 minutes. Stir the mixture after every 15 minutes.
  • Sometimes it takes less time and sometimes it takes more. It’s ready when the mixture is golden and crunchy.
  • Allow to cool then add in your goji berries.
  • Transfer to a glass Kilner jar.
  • If you like, you can add dried cranberries, raisins, currants or sultanas at this point. I am not mad on the dried fruit but they do make a great addition in terms of variety of nutrients.
  • Serve with your favourite milk or yoghurt.
  • If you prefer you can have it as a snack with yoghurt and fresh fruit later in the day.
