Homemade Crunchy Goji Granola

I love granola and over the past few years, I have been trying to perfect my own recipe. Some granolas are too fruity, too sweet, lack flavour, or are simply not what I wanted. So, I have mixed and matched and added and taken away to come up with what I think is delicious granola. I like how it looks; the red goji berries bring it to life visually which is important to me. Food should look appealing and this granola ticks that box for me. Coconut oil is great, but having to melt it means another pot to wash and I am all for keeping it simple. So instead, I use Organic Sunflower oil (Meridian is the brand I use). I prefer the flavour to the coconut oil which a lot of recipes call for. This recipe uses three different grains: oats, barley, and rye, in equal parts, this is great because you have a variety of nutrients this way. With the three grains, you have varying amounts of protein, starch, and fibre. Rye has the highest level of vitamin E and folate, Barley is best on B3, and Oats for. They all contain these vitamins but in varying quantities. The goji berries are a fantastic addition to any granola. They are great for your eyes, skin, and for immune support too. You can choose Agave, Rice, or maple syrup, I like the Biona Mild flavour. So here it is, my favourite granola recipe. I hope you like it too.

Homemade Crunchy Goji Granola

Ingredients

  • 1 cup of barley flakes

  • 1 cup of rye flakes

  • 1 cup of porridge flakes

  • ¼ cup sunflower seeds

  • ¼ cup pumpkin seeds

  • ½ cup goji berries

  • 2 teaspoons vanilla extract

  • ¼ cup sunflower oil

  • ¼ cup agave syrup

  • A Pinch of coarse salt

Directions

  1. Preheat the oven to 140 degrees gas mark 1

  2. Combine all the ingredients except for the goji berries in a large bowl and make sure that everything is mixed well

  3. Transfer to a large rimmed baking tray. Spread the mix out evenly flattening the mixture with a wooden spoon.

  4. Bake in the oven for 40 minutes. Stir the mixture after every 15 minutes.

  5. Sometimes it takes less time and sometimes it takes more. It’s ready when the mixture is golden and crunchy.

  6. Allow to cool then add in your goji berries.

  7. Transfer to a glass Kilner jar.

  8. If you like, you can add dried cranberries, raisins, currants or sultanas at this point. I am not mad on the dried fruit but they do make a great addition in terms of variety of nutrients.

  9. Serve with your favourite milk or yoghurt.

  10. If you prefer you can have it as a snack with yoghurt and fresh fruit later in the day.
