Breakfast is the most important meal of the day, it gets the metabolism going and sets you up for the day. These breakfast balls are great for all you busy people, especially, if you don't have much time in the morning as they can be made up in advance. Best part is they are healthy and very filling. Three balls are a portion.

    12 PEOPLE

  • 4 Large Bananas - approx. 480g (The riper the better)

  • 50 grams of Desiccated/Dried Shredded Coconut

  • 50 grams of ground nuts. (Almonds or Hazelnuts are my favorite)

  • 400 grams of Jumbo Oats

  • 60 - 100grams of Raw Cacao Nibs for the healthier option or just plain old chocolate chips

  • 1 teaspoon of Baking Powder

  • 2 teaspoons of Cinnamon

  • 3 teaspoons of Vanilla Extract

  1. Turn on the oven and let it be heating up. Set the temperature to 170C. Also line a baking tray with some baking paper.

  2. Grab a large bowl and throw the bananas in. Mash them up using a potato masher.

  3. Add the cinnamon, vanilla and baking powder to the mix and give them all a really good mix up.

  4. Add the coconut, nuts and chocolate chips and mix them.

  5. Lastly add the oats and mix until all of the oats are mixed in.

  6. Now that you have finished mixing the next step is to make the balls. A level tablespoon makes the right size ball.

  7. Take a scoop and mold it into a ball with your hand. Place the balls on the tray with a small gap between them. The mix should get you around 36 - 40 balls.

  8. Bake in the oven for about 20 minutes until they are golden brown. Keep an eye on them as oven temperatures vary.
