A delicious healthy pumpkin hummus that can be enjoyed on crackers.

Pumpkin Spiced Hummus

Ingredients

  • 250 g cooked organic Chickpeas

  • ½ small raw pumpkin around 300g

  • 1 tbsp extra virgin olive oil

  • 1 large garlic clove

  • 1 tsp sea salt or to taste

  • ½ tsp freshly ground black pepper

  • ½ tsp ground cumin

  • ½ tsp smoked paprika

  • ¼ tsp ground cayenne pepper

Directions

  1. Peel, deseed & cut the pumpkin into 3cm chunks. Place it in a colander over boiling water and steam for 30 minutes or until you can put a knife easily through it. Let it cool.

  2. Place all the ingredients into a high-powered blender (a food processor) and blend until smooth.

  3. Check the seasoning. Transfer the hummus to a serving dish, garnish with a sprinkle of paprika, pumpkin seed and a drizzle of extra virgin olive oil and enjoy with crudities or homemade crackers.

  4. Enjoy immediately or properly store in an airtight container in your refrigerator and enjoy within 3 to 4 days.
