Pumpkin Spiced Hummus
A delicious healthy pumpkin hummus that can be enjoyed on crackers.

Ingredients

250 g cooked organic Chickpeas

½ small raw pumpkin around 300g

1 tbsp extra virgin olive oil

1 large garlic clove

1 tsp sea salt or to taste

½ tsp freshly ground black pepper

½ tsp ground cumin

½ tsp smoked paprika

¼ tsp ground cayenne pepper
Directions

Peel, deseed & cut the pumpkin into 3cm chunks. Place it in a colander over boiling water and steam for 30 minutes or until you can put a knife easily through it. Let it cool.

Place all the ingredients into a high-powered blender (a food processor) and blend until smooth.

Check the seasoning. Transfer the hummus to a serving dish, garnish with a sprinkle of paprika, pumpkin seed and a drizzle of extra virgin olive oil and enjoy with crudities or homemade crackers.

Enjoy immediately or properly store in an airtight container in your refrigerator and enjoy within 3 to 4 days.
