What is Kombucha?

Kombucha is a naturally fermented tea drink made using a SCOBY, which stands for Symbiotic Culture of Bacteria and Yeast. The result is a refreshing, lightly fizzy drink with a tangy flavour that can be enjoyed on its own or flavoured after fermentation.

Directions

How to Prepare
Brew a strong sweet tea using your chosen tea and 50g sugar per litre.
Allow the tea to cool fully before using.
Add 200ml concentrated sweet tea to your brewing jar.
Add 700ml cool water.
Add 100ml kombucha starter and the SCOBY.
Cover the jar with a breathable cloth or fermentation cover.
Leave to ferment at room temperature until the kombucha reaches your preferred flavour.

The longer it ferments, the more tangy and less sweet it will become.
