Vegan Jackfruit Taco's

This recipe should make approximately 8-10 small tacos, which would suffice to serve 2-3 people as a main dish or 4-5 people as a side dish.

Ingredients

1 can of Biona young green jackfruit in water or brine

1 tbsp olive oil

1/2 onion, chopped

2 garlic cloves, minced

1 tsp chili powder

1/2 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

Juice of 1 lime

8-10 small tortillas

Toppings: chopped cilantro, sliced avocado, diced tomato, shredded cabbage

Drain and rinse the jackfruit, then pat it dry with a paper towel. Remove any seeds or tough parts and shred the jackfruit with a fork.

Heat the olive oil in a large skillet over medium heat. Add the onion and cook until translucent, about 5 minutes.

Add the garlic and cook for another minute.

Add the jackfruit, chili powder, cumin, smoked paprika, salt, and pepper, and stir to combine.

Cook for about 10-15 minutes, stirring occasionally, until the jackfruit is tender and slightly browned.

Remove from heat and squeeze lime juice over the jackfruit.

Warm the tortillas in a dry skillet or on a griddle.

To assemble the tacos, add some jackfruit to each tortilla and top with cilantro, avocado, tomato, and cabbage.
