Ingredients

  • 4 cups mixed vegetables (such as butternut squash, Brussels sprouts, red onion, bell peppers, cherry tomatoes, etc.), cut into bite-sized pieces

  • 2 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • ½ tsp smoked paprika

  • ½ tsp turmeric

  • ¼ tsp cayenne pepper (adjust according to your spice preference)

  • Salt and pepper to taste

  • Fresh coriander or parsley for garnish (optional)

Directions

  1. Preheat your oven to 200°C

  2. In a large mixing bowl, combine the mixed vegetables.

  3. Drizzle olive oil over the vegetables and toss until they are evenly coated.

  4. In a small bowl, mix together ground cumin, ground coriander, smoked paprika, turmeric, cayenne pepper, salt, and pepper.

  5. Sprinkle the spice mixture over the vegetables and toss until they are well coated with the spices.

  6. Spread the seasoned vegetables in a single layer on a baking tray lined with parchment paper.

  7. Place the baking tray in the preheated oven and roast for about 25-30 minutes, or until the vegetables are tender and slightly caramelised, stirring once or twice during cooking to ensure even roasting.
