  • 700 g baby potatoes, washed and halved

  • 1 red bell pepper, cut into strips

  • 1 green bell pepper, cut into strips

  • 1 yellow bell pepper, cut into strips

  • 1 onion, sliced

  • 2 tbsp olive oil

  • 2 tbsp soya sauce

  • 1 tsp chili flakes (adjust according to your spice preference)

  • 1 tsp chili powder

  • 1 tsp ground fennel seeds

  • ½ tsp ground ginger

  • ½ tsp ground coriander

  • ¼ tsp ground cloves

  • ¼ tsp ground cinnamon

  • Salt and pepper to taste

  • Fresh coriander or parsley for garnish (optional)


  1. Preheat your oven to 200°C

  2. Place the baby potatoes in a pot of salted water and bring to a boil. Parboil the potatoes for about 8 minutes until they are partially cooked but still firm. Drain and set aside.

  3. In a large mixing bowl, combine the parboiled baby potatoes, bell peppers, and onion.

  4. Drizzle olive oil and soya sauce over the vegetables and toss until they are well coated.

  5. In a small bowl, mix together chili flakes, chili powder, ground fennel seeds, ground ginger, ground coriander, ground cloves, ground cinnamon, salt, and pepper.

  6. Sprinkle the spice mixture over the vegetables and toss until they are evenly coated.

  7. Spread the seasoned vegetables in a single layer on a baking tray.

  8. Place the baking tray in the preheated oven and roast for about 35-40 minutes, or until the baby potatoes are golden and crispy, stirring once or twice during cooking to ensure even browning.

  9. Once cooked, remove from the oven and let the potatoes cool slightly before serving.
