Healthy Chickpea Nuggets

50 g Rolled Oats

400 g Biona Organic Chickpeas

½ tsp Garlic Powder

1 tsp Onion Powder

¼ tsp Ground Cumin

50 g Breadcrumbs
Directions

Preheat the oven to 180°C (160°C fan) and line a baking tray with parchment paper.

In a blender or food processor, blitz the oats until finely ground.

Drain the chickpeas, saving the liquid (aquafaba), and add the chickpeas to the blender along with the oats, ½ teaspoon onion powder, garlic powder, cumin, salt, pepper, and 5 tablespoons of aquafaba. Blitz into a thick paste, leaving some chunks for texture.

In a shallow dish, mix the breadcrumbs with the remaining ½ teaspoon of onion powder.

Roll 1 tablespoon of the chickpea mixture into a ball and shape it into a nugget. Coat in the breadcrumb mixture and place on the baking tray. Repeat with the remaining mixture.

Bake for 20 minutes (they’ll stay light in color) and enjoy!
