Ingredients

  • 2 large tomatoes, diced

  • 1 cucumber, peeled and diced

  • 1 red bell pepper, seeded and diced

  • ½ red onion, thinly sliced

  • ½ cup cup Kalamata olives, pitted

  • 150 g feta cheese, crumbled

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the diced tomatoes, cucumber, red bell pepper, red onion, and Kalamata olives.

  2. In a small bowl, whisk together the extra-virgin olive oil, lemon juice, dried oregano, dried thyme, salt, and pepper to make the dressing.

  3. Pour the dressing over the salad ingredients and toss gently to coat all the vegetables.

  4. Sprinkle the crumbled feta cheese over the salad and lightly toss again to distribute the cheese evenly.
