Ingredients

  • 125 g Plain Flour

  • 2 tbsp Organic Coconut Palm Sugar

  • 1 tbsp Baking Powder

  • ½ tsp Salt

  • 240 ml Non-Dairy Milk

  • 1 tbsp Apple Cider Vinegar

  • 1 tsp Vanilla Extract

Directions

  1. Combine Dry Ingredients: In a medium bowl, whisk together the plain flour, coconut palm sugar, baking powder, and salt until well blended.

  2. Mix Wet Ingredients: In another bowl or liquid measuring cup, combine the non-dairy milk, apple cider vinegar, and vanilla extract. Stir until mixed.

  3. Create the Batter: Pour the wet mixture into the dry ingredients and whisk until smooth. Allow the batter to rest for 5 minutes for fluffier pancakes.

  4. Cook the Pancakes: Heat a non-stick pan over medium heat and pour approximately 65g of batter onto the pan. Cook until bubbles form on the surface, then flip and cook until golden brown.

  5. Serve and Enjoy: Serve the pancakes warm with your choice of a dollop of coconut whipping cream, maple syrup or fresh berries if desired.
