Chickpea and Quinoa Stuffed Peppers

These Chickpea and Quinoa Stuffed Peppers, are a delicious dish that promotes bone health. Each pepper is filled with protein-rich chickpeas and nutrient-dense quinoa, both excellent sources of calcium and magnesium—key minerals for strong bones.

Ingredients

  • 4 Bell Peppers

  • 1 cup Cooked Quinoa

  • 15 oz Chickpeas, rinsed and drained

  • 1 cup Diced Tomatoes (canned or fresh)

  • ½ cup Sweet Corn

  • 1 tsp Cumin

  • 1 tsp Paprika

  • ½ tsp Garlic Powder

  • Salt and Pepper to Taste

  • Fresh Coriander To Garnish

Directions

  1. Preheat the oven to 190°C

  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.

  3. In a large bowl, mix together quinoa, chickpeas, tomatoes, corn, cumin, paprika, garlic powder, salt, and pepper.

  4. Stuff each bell pepper with the quinoa-chickpea mixture, packing it tightly.

  5. Cover the baking dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes.

  6. Garnish with fresh cilantro before serving.
