Ingredients

4 Bell Peppers

1 cup Cooked Quinoa

15 oz Chickpeas, rinsed and drained

1 cup Diced Tomatoes (canned or fresh)

½ cup Sweet Corn

1 tsp Cumin
-
1 tsp Paprika
-
½ tsp Garlic Powder

Salt and Pepper to Taste

Fresh Coriander To Garnish
Directions

Preheat the oven to 190°C

Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.

In a large bowl, mix together quinoa, chickpeas, tomatoes, corn, cumin, paprika, garlic powder, salt, and pepper.

Stuff each bell pepper with the quinoa-chickpea mixture, packing it tightly.

Cover the baking dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes.

Garnish with fresh cilantro before serving.
