Health benefits of Kefir

Kefir is a food that has become very popular.

Kefir is basically fermented milk. It’s extremely rich in good gut bacteria which are needed to help keep you healthy. The good bacteria help the digestive system, keeping it healthy, reducing the symptoms of bloating, indigestion and constipation. Kefir contains several strains of bacteria which colonise the gut. It contains minerals, vitamins and some amino acids and is involved in the production of immune cells. Kefir is an excellent food to include in your diet.

You’ll find kefir drinks, ice-cream, and yoghurts plus kefir drinks made with water for those that prefer to avoid dairy. You can buy the grains to make kefir at home, or you may know someone that has a surplus of them who is willing to share. Kefir grains looks like curds of sour milk or tiny bits of cauliflower broken up.


How to make Kefir

To make kefir you will need a 500 ml jar, milk of your choice and the grains, that’s it. Put one tablespoon of grains into the jar, add the milk until its ¾ full and close the lid. Leave the mixture to ferment for 24 hours in a warm place. Then strain the kefir into a clean jar, straining until you’re left with the grains in the strainer. Never use metal utensils. Put the grains back into the jar you emptied and fill with milk again and put the other one into the fridge to drink later. You should find that if you leave it in the fridge it thickens and goes creamy like yoghurt. Kefir feeds on sugar to grow but it will have absorbed all of the sugar before you get to it. The grains multiply over time and you’ll have plenty to share with family and friends.


When is the best time to take Kefir?

The best time to take kefir is first thing in the morning on an empty stomach. You can use kefir as a substitute for buttermilk or yoghurt in baked goods. You can add it to smoothies, make your own ice cream, or simply enjoy it as a beverage.
